Sometimes you just want something that is really quick but super tasty, and if it can feel a bit special to glam up a mid-week dinner then it’s an added bonus, and this recipe really ticks those boxes. This is one of those times when you want to get everything chopped and prepped before you start cooking, as it all comes together really quickly. Plus, I got this from BBC Good Food magazine, so you know it has been thoroughly tested before being shared with the world, so you know it’s going to work.
